Reverse-seared Striploin Steak and Red Peppers

Making meals for low carb eating is easy. I like my vegetables stir fried. I don’t need many vegetables so I clean, peel and chop up only a few of them. My vegetables go a long way! I like the combination of two and at most three vegetables. Onions nearly always find their way into my meals. Onions fried in ghee; you can’t go wrong! I like red peppers, too. I prepare the vegetables while the steak is baking in the oven at 350 F. when the steak is 20 minutes or so from coming out of the oven, I put the ghee-coated vegetables in a pan at about medium heat. A few minutes before the steak is ready to come out of the oven, I fire up the barbecue. The steak usually rests for ten minutes (under tinfoil and a tea towel). The heat on the vegetables is turned to the lowest setting. Now the fun part; getting the steak on the barbecue and sizzling each side for two to three minutes. Just to get the char.
