Short Ribs browned all sides, a roughly chopped ½ of an onion and 8 whole, peeled, cloves of garlic in a couple tablespoons of ghee using a dutch oven on the stove top. Then all into a 300°F oven for a couple of hours. 30-40 minutes before the ribs were ready the zucchini, broccoli crowns and stems were sautéed in ghee, carefully turning them to keep them at the ‘just-browned’ stage.
The extra oils and fats were left in the pans; there is no need to add extra fats and oils in a ketogenic diet. This just adds calories.
