Some nights, ya just want to have a hamburger. This is our one of our hamburger meals, low carb, of course! A pound of raw hamburger makes 4 nice quarter-pounders. We try to buy the fattiest hamburger, but it invariable turns out to be the ‘lean’ grind. Someday I’ll write about what to ask the butcher for. Do you have any ideas for me? Sauté the mushrooms in a tablespoon of ghee before starting the hamburgers. Stir-fry the red peppers in a separate pan with a teaspoon of ghee. The cucumbers were fresh from the fridge. Barbecue the hamburgers on the grill if you have one, otherwise pan fried is great, too! We use a bit of bacon fat to stop the meat from sticking to the pan. Wait for the hamburgers to brown at least ½ way up the side of the burgers before flipping over. Key point: only flip once.
